How We Raise Funds
During the annual cook-off, Brisket Cases isn’t just competing—we’re hosting. Each year we dedicate a day to serving The Houston Hurricanes Equestrian Team and their families, and in recent years, we’ve also welcomed The Sunshine Kids for a day of fun, food, and community. With our expanded tent space (added in 2010), we can host nearly 500 invited guests at a time and feed up to 1,500 people each night during the event, with proceeds going directly to scholarships.

For the Kids

The Brisket Cases Bar-B-Que team has been serving up more than great barbecue since 1973. What started as a group of friends coming together on a dare, a whim, or just for fun has grown into one of the oldest and most successful competitive cooking teams in Texas. A year after our founding, the Houston Livestock Show and Rodeo launched the first World Championship Bar-B-Que Cook-Off in the shadow of the Astrodome—and we’ve been part of it ever since.
From day one, our purpose has gone beyond the pit. You may notice our members and sponsors wearing a badge that says “For The Kids.” That’s not just a slogan—it’s a reminder of why we do what we do. Through our efforts at the cook-off and the generosity of our sponsors, we raise scholarship funds for the Houston Livestock Show and Rodeo Scholarship Program, as well as donations to other local charities that support Texas youth.
As of March 2023, Brisket Cases and our sponsors have contributed over $450,000 toward the HLSR Scholarship Fund—helping take our Texas children to the next level so they can become the leaders of tomorrow.
What’s on the Menu?
Our guests enjoy much more than brisket—though we take a lot of pride in our slow-smoked, melt-in-your-mouth signature cut. We also serve juicy bar-b-que chicken, savory sausage, and tender pulled pork, each cooked low and slow over seasoned wood for that unmistakable Texas flavor.
But no plate is complete without the fixings. Classic sides like creamy potato salad, smoky bar-b-que beans, and flavorful cabbage make the perfect pairing for our meats. And of course, there’s always plenty to go around—because at Brisket Cases, no one leaves hungry.
It’s more than a meal; it’s an experience shared with friends, family, and fellow barbecue lovers, all gathered together.
